Chicken & Butternut Squash Keto Stew

Ingredients 

  • 1⁄2 butternut squash, peeled and cubed
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 2 bay leaves
  • 2 chicken breasts, in cubes
  • 120g of Keto Hana Cinnamon granola
  • 1 can of chopped tomatoes
  • 1 can of water
  • 10 cherry tomatoes
  • 1⁄2 tbsp of ras el hanout
  • Salt and pepper
Toppings:
  • Chopped parsley
  • Coconut yoghurt
  • Pomegranate seeds.

How to Make Chicken & Butternut Squash Keto Stew

    1. Sautee the onion and celery.
    2. Blend  Keto Hana Cinnamon granola until dust.
    3. Add to a pressure cooker together with the butternut squash, bay leaves, chicken, blended cinnamon granola, tomatoes, water and spices.
    4. Cook for 10-11 min, release pressure.
    5. Serve in a sharing bowl adding the toppings to finish.
